Stuart Daly
Stuart started his career in
hospitality 16 years ago. He has spent that time working in
some of the world’s finest 5-star hotels, restaurants and
catering companies from his native country Ireland, to
Australia, Maldives and Thailand.
Highlights of his career have included being part of the
culinary team of the print media during the Sydney 2000
Olympic Games. This was followed by a senior position with
the Sodexho Australia Special Events Team and two years at a
multi award winning International Resort in the Maldives.

His focus and commitment is
always to deliver the highest levels of guest service and
satisfaction across all areas of the customer journey
throughout the operation from the arrival experience,
comfort of guest rooms, locker room facilities, restaurant
and bar to their departure.
Stuart brings to GLS Asia his depth of knowledge in all
aspects of high-level hotel, catering, food & beverage
operations. From private dining for 2, to corporate catering
for 10,000, his knowledge of local products, relationship
with suppliers and understanding of local workforce skills
is unsurpassed.
Stuart leads the Food Hygiene & Safety program using his
years of experience. Stuart has successfully trained
hundreds of hotel and catering staff in the safe production
and service of hotel services.
Stuart’s roll will include the implementation of all
accommodation and front office services, housekeeping, food
& beverage concepts from design to sourcing equipment and
menu planning. |
